There you go, So today I tried a new recipe, vegan cottage cheese, made with tofu! I didn’t follow the instructions… so I will have to try again while being nice and following the steps !! But the final result is still good!
Vegetarian Cottage Cheese Recipe Ingredients
- 250 g hard plain tofu
- 1/2 cup fine tofu (silky) – essential to have the creaminess
- 1 tsp. lemon juice
- 1 tsp. apple cider vinegar
- 1/2 tsp. coconut or sesame oil
- 1 tsp. coconut oil
- 1 tsp. 1 tsp agave syrup or maple syrup (agave will give a more neutral taste)
- 1 tsp. vegan mayonnaise
- Sea salt, to taste
Instructions
- Put the firm tofu to steam for 10 minutes. It is essential for taste.
- Let the tofu cool.
- Crumble the cooled tofu to obtain small pieces suggestive of the lumps of regular cottage cheese.
- Put the silky tofu in a food processor with oil, vinegar, lemon juice, and agave syrup.
- Mix to obtain a thick creamy mixture. If it’s too thick, add a few spoons of plain rice or almond milk, or water.
- Add the combined mixture to the crumbled tofu and 1 tsp. vegan mayonnaise.
- Salt to taste.
