  • 175 g flour
  • 175 g fine durum wheat semolina
  • ½ tsp. 1 teaspoon salt
  • 12 to 15 cl lukewarm water

Preparation

  1. In a large bowl, combine flour, semolina, and salt. Pour the warm water (10 to 12 cl first) and stir with a wooden spatula until you get a fairly firm but malleable dough.
  2. Rather gradually add more water if the dough seems too dry.
  3. Form a ball with the dough and place it on a floured work surface.
  4. Knead for 10 minutes.
  5. Leave to rest for 20 minutes under a clean cloth or wrapped in cling film.
  6. Cut the pasta according to the desired shape and size

  1. In a bowl, combine the flour and salt.
  2. Stir the baking soda in the water.
  3. Add the water to the flour and combine.
  4. Seal the bowl tightly (with a lid or in a plastic bag).
  5. Let it rest for 12 hours.
  6. Bring a large pot to the boil (put a little salt in the water)
  7. Put flour on the table and place the dough on it.
  8. Take a piece of dough and roll it very thinly.
  9. Cut the dough into thin strips (I like to use a pizza cutter)
  10. Peel off the strips and put them on a plate by sprinkling a little flour to prevent them from sticking together.
  11. Do the same with the rest of the dough.
  12. When the water boils, place the pasta in it and cook for 1 to 2 minutes depending on the size of the pasta.
  13. Remove the pasta and enjoy in a vegetable/miso broth with seaweed and kimchi! 🙂
  14. If you have too much-cooked pasta, you can dehydrate it for a few hours to save it for later.
  15. You can also freeze the uncooked pasta. It will be enough to put them directly in boiling water to give the same texture as if we had just made them.
  16. You can also freeze the dough. Just let it thaw and then make the ramen. The result will be the same.

Important note: the amount of water varies a lot depending on the type of flour. Non-organic commercial flour may need less water.
